In 1925 the Chicago Chefs of Cuisine was founded & became a member of the ACF in 1929. The early years of the association served as an employment and chef's reference office, and had an index of the nations leading hotels on file.
This also marked an important event in our history when, on October 12, 1927. world renowned culinary Master Chef Auguste Escoffier visited Chicago and our chapter presented him with an honorary membership. In 1929 the National American Culinary Federation was founded.
Since the very beginning the ACF Chicago Chefs have been apart of many changes & achievements that have sculpted the landscape of Chicago as a Culinary Mecca to the Midwest and America.
